Is it possible to have too many worms in your garden? i have about 6-7 per sq. foot. (seems like that anyway)

and,

If i cut a grub in half, does that kill it or does it become two grubs similar to worms?

No such thing as too many worms. You probably have a lot of organics in your soil so it can support more.
As far as grubs, nope you have two pieces of a dead one. Probably a june bug waiting to emerge

I heard that you can eat June bugs, that the natives ate them roasted like popcorn
