So, for the first time tomorrow, I'm going hunting. Duck hunting. I'm very lucky for a seasoned hunter to be taking me under his wing (so to speak) to teach me how to do it.
I believe as should we all that hunting is a critical skill to have. Meat for eating, feathers and skin for warmth and shelter. Can't go wrong there.
I'll fill you all in on my first time experience - if you have a group there should be more than one hunter in it. Actually, I think it's a skill everyone should have to some degree!
It's better to prep for something that may never happen than not prep for something that does.

Yea man, I'm really psyched for it. I was supposed to go a bunch of times earlier but my dumbass manager told us we couldn't book vacation sept or oct because of some training for a new waterplant. I missed an awesome field hunt because I had to take 10 minutes of emergency SPRINKLER training. Yes, here is a sprinkler. Fire comes in the plant the sprinklers turn on. Duh. Stupid work. Although work pays for preps so whatever.
If I get some tomorrow I'll bring some duck boob jerky to the meetup on Sunday!

Just got back from moose hunting a week ago. Didn't get anything this year. It was hard getting tags this year, had to go to Quebec. Went fishing and got some nice white fish. Good Luck and Good Hunting to you.

Gearing up for 2 weeks of rifle whitetail season followed by a week of bow. Should be happening during the prime of the rut this season, very excited.
Last year I was able to take two BIG bucks and provided my family with 310lbs of meat. Felt good.
It's coming... and it's going to hurt!
Duck is good, Goose is even better, if you need any idea's on recipes let me know, and if you garden, I have a way to compost out the feathers twice, once to a make a feather tea for use in the garden and then the leftovers go into a honeypit to finish composting out in.. anyway, enjoy your first hunt, I still remember being so excited at the age of eight when I got to do my first one (back when the rules and laws were a bit different then today), it was the mighty Gopher!

Seeing as you said Xmas, here is a colorful one for you..
I really enjoy my big ducks, when using them, you only want one duck’s worth of breasts for this recipe, same if you were using hunted Canadian Goose, if you are using regular size ducks, I would think you would need four duck breasts, this recipes is perfect for when you are skinning your birds and breasting them out, using the legs/thighs for a different recipes and the bones/extra’s for broth making.
Take your skinned, boneless duck or goose breast halves, and heat your oven to 375, Heat your cast iron fry pan till very hot, season your duck or goose breasts on both sides with salt/pepper, add a swirl of your best olive oil and let it get hot, then add the beasts, reduce your heat to med and do a nice browning on both sides about 2 min each side, and then put your whole pan into the oven for another 5 to 8 min, (5 min for med-rare, 8 min for medium), Take the breasts out and cover them with tinfoil and let them rest.
Some folks like to take off the fat, but I only do so if there is alot, otherwise I leave a little in the pan, heat it on the stove on a med heat and add 1 tbsp of butter, add in finely diced green onion or shallot, or garlic scrapes, or fresh horseradish leaves, Cook till softened about a min or so, then add 3/4 cup of any good sherry, 1/2 cup of homemade cherry jam or homemade cherry pie filling or Dried Pitted Sweet Cherries or Sour Cherries, and 2 tbsp of balsamic vinegar, simmer till its as thick or thin as you would like.
Slice your duck or goose breasts and top with the sauce, excellent when served with baby oven roasted veggies, a mix of onion, garlic, turnips, carrots, parsnips and potato’s round out this meal.
Now I am not going to copy out each one that I have put up on the blog, but I will put a single link to my recipe page, as It has 12 different detailed duck recipes , ranging from everything using their livers, hearts, even fresh duck blood soup as well as more common recipes. Not sure I would recommend the duck blood soup with wild birds but It is very good when you know the sourse of the birds, and do consider trying that curry duck heart soup, it was yum!

This is a favorite for everyone that I have ever served this to..
Take one large duck breast and trim all four sides flat, one breast will cut into six small round medallions. You can use the left over trim cut into tiny peices in a soup or stew at a later point. This will take 3 peices of bacon, cut in half, one half per medallion.
Wrap your bacon around your peice of duck breast, you can do it around the peice or over the peice, both will work, its up to you on which one you like more, I am showing the looks above, the one on the left is wrapped around the outside, and the one the right is wrapped around an over.
Heat your cast iron with a little bacon fat if you have it, otherwise any good oil will do, at med heat, preheat your oven on broil or to at least 400 or 425. Season your meat, wrap the bacon around them, sear them in the pan, about a min each side or so, then take your hot pan (remember the handle will be hot, use a oven mitt) and into the oven for another 3 to 5 min to finish cooking to a med-well, you want them to run clear juice.
Take out and let rest for the min this will take, take a big handful of sliced leeks, with a grateing of fresh horseradish and one finely minced fresh garlic clove, into the hot bacon fat in the pain, just wilt it all together, and let it cook for just a min, then put on the plate, with two of the Duck Medallions on top, I think this goes just smashing with mashed turnips and whipped garlic potatos.. Heaven!
Duck Breast Fried Steak.. Its so easy but O so good.. Take a nice large duck breast and carefully slice it open and into two equal pieces, now this breast was allowed to sit in a salt bath for at least 48 hours after butcher to mellow in the fridge, if you are worried about it still being a bit thick, give it a wack and thin it out..
Then I dipped it into some thick greek yogurt, and then into a mixed oatmeal/finely ground cornmeal, with black pepper, seasoning salt, garlic powder, Onion powder and a little hot pepper as well, into a med-high cast iron pan, make sure your oil is hot before adding your breaded breasts.
I wanted it to be a nice med-well, I cooked it about 3 to 4 min each side, till crispy brown, and the juices were just pink, allowed to rest for a min or two and it was tender, moist with just a hint of pink left, I love this the sweetness of mashed Acorn Sqaush as a side.

Good luck on your outing!! Im stoked too. I think hunting teaches us so many things. I cant wait to teach my little ones. Too bad there are so many ignorant people out there thinking we are wondering around the bush like some bad cartoon.
Last fall I was chatting with a receptionist at work, we spoke about the hunting season approaching. The next day, she told me I had really enlightened her as to 'hunters' and what we are all about. I had a real impact on her views. By no means was I trying to sell her on how great we are, but she said the passion I had when I spoke about it and my views on responsible hunting, respect for game and property rights, she said it really lasted.
Most importantly it teaches us soooooo much about ourselves and qualities that will make us people that will always thrive and carry on in adverse conditions.

Well, a few things.
#1 - I already understood that just getting a PAL and a hunting license doesn't guarantee success. It was reinforced the other day. So many things against you. According to my buddy, it was not a good hunt day because it was more or less in between migrations and there was no wind so the ducks didn't feel the need to come into the protected areas where the blinds were. Also, ducks are fast and come out of nowhere and disappear just as quickly. I got one time where I had the bead on the duck and was moving the gun properly and hit the trigger and... safety on. Damn. Another was first thing in the morning and I had a perfect shot at a goose but i didn't KNOW i could have taken the shot and my buddy was in the bay putting up the decoys and i was confused as to weather i SHOULD shoot. Turns out as long as I'm not aiming at him it's fair game. At the end of the day I dummied a teal, shot a split second after my buddy shot at it.
End of the day I got nothing. He got his six but only in the late afternoon. It was a tough slog. I'll write up a thorough description on my blog and post thing link when I'm done.

Checked the Game Cameras yesterday . This photo was taken 50' from my tree stand and, seeing as though I have an Antlerless Tag this year, things look good. 😀 There were other photos of Does ( 25 in total) but they are not as good as this one. There are some Bucks around there too ( several scrapes on the ground in the area) but they didn't step in front of the lens. 🙁 That's OK... just as long as they step in front of the muzzle. 😈
