Pemmican Jerky

Forecast called for rain last night so I decided to whip up a batch of pemmican jerky and watch it dehydrate while having a few wobbly pops and working around the shop.

Here is the recipe:

2 lbs of lean beef ( I used tibetian yak shoulder)
1 cup dried berries, such as dried blueberries, cranberries, or cherries
1 cup chopped nuts or sunflower seeds
¼ cup vegetable shortening
Honey to taste (1 to 3 teaspoons)

Grind or chop cooked yak into confettisize pieces to make about 3 cups. Melt suet or shortening in a saucepan.
Remove from heat, stir in beef jerky, dried berries, and seeds. Stir in honey.
Spoon about ¼ cup of the pemmican mixture into flat squares. Press down firmly to make a cake, smoothing the top.
Refrigerate until well set. Cut into strips and lay in dehydrator for 6-8 hours.

Some tasty jerky.
