Don't stress that there will always be something more to add but you're the best judge of contents because only you know how far you have to travel and what awaits you at the other end (cache, cabin, family ranch, etc).

might want to add little Bike Trailers to the list, they are not that hard to make. Youtube or instructables have some good ideas for hitches for them. That way, you can carry much more. Add in Saddle bags, racks, front and back for the bike as well.
Fire, you have a few ways of making it, seeing as your Ex military. Need some magnesium/steel bar strikers then need to add in some cotton balls, dry and some that are rolled in Vaseline. Keep them in two zip lock pouches, you will find them very helpful for creating fires from wet stuff as well, it is just so easy to light them up and get them running, beats those expensive and heavy fuel tabs we used.
Quick grab bags of summer and winter clothing, including lightweight footwear, evenings or for when the others are soaked. I have a bag, that does not get touched for both winter and one for summer type clothing. Winter has polypro, gloves, heavy socks, lighter socks, neoprene socks (for the really wet stuff) gloves, hat etc.
Glasses, do you wear glasses, need reading glasses? Then get back ups, wrap them in microfibre cloths and put them in a heavy duty plastic container with water proof lid. This way they will be protected, no scratches and the container can be used for other things later on.
