Dehydrated potatoes

Hello all,

I successfully dehydrated about 5lbs of potatoes a few months ago. After dehydrating, I ground the chips into a powder and vacuum sealed the powder in a 1 pint mason jar. I reconstituted last night as an addition to my meal. The taste was excellent, but the consistency was a little grainy. The addition of water and milk powder helped, but I was wondering if anyone out there had any other ideas.

If you reconstitute in the liquid for longer this may help get rid of the graininess. I use more liquid (milk, cream and butter) than I would for fresh potatoes when using my sliced dehydrated potatoes. Cook for longer in the oven (about 2 hours +) and they are great.

This is very timely as i am just looking at doing 5 lds worth. I am considering other vegs as well like carrots, turnips, kale, spinach ......... I am also looking at making sauer kraut from the same vegs.

Anybody with experience in this I would love to hear about it.
