i canned some potatoes on the weekend ,i have notices the water has gone very cloudy nearly white.Does anyone know if this
is ok or should i throw the batch out and start again.ThanksIt's fine, its just the starch and the food will be fine, just ideally give them a rince off before using them, or as Anita said, cook a tiny bit and rince off the starch and then you can just add the water as well, pesonally I just rince them off..
My Red or Green Pepper Pasta Sauce
■10 pds of red peppers
■3 pds of roma tomatos
■3 pds of white onions
■1 whole garlic or about 8 big cloves
■1 or 2 hot peppers, seeded out depending on the heat you like, add more or less.
■2 cups of white or apple vinager
■3 cups of white or brown sugar
■3 tbsp of canning salt and fresh cracked black pepper
Put them though the blender, and then simmer for at least 4o to 60 min till thicken to your tastes, then can, I put hot into hot jars and then pressure can for 20 min, this recipes was used for years in the family as a waterbath recipe, boiling sauce to just lifted boiled jar and right back into boiling hot water bath for 30 min..

If you like Welch's Grape Juice you will Love this Recipe, my Wife makes this Every Year from Concord Grapes we grow in our garden.
Steralize Mason Jars in boiling water for 4 minutes, revove from heat. Add lids and rings for 5 minutes in hot water... do not boil.
Put 1 1/4 cup of grapes and 1/3 cup of sugar in each of the hot jars. Pour boiling water into jars and seal with hot lids.
Flip jars upside down and right side up... off and on while hot to mix sugar.
Let sit for a minimum of 6 weeks, strain and serve.
I don't know how long this will keep in the Cold Room as it does not last long around this household. My Wife usually makes 24 jars every Fall and it's gone by April 😆
FYI: This Year she tried this recipe with 8 jars of Frozen Grapes... but only added 1/4 cup of sugar to each jar. Ice Grape Juice Anyone!!

I had gotten a great recipe for canning Bacon, on the Backwoods home site, gave it a try and it worked out great, all you need is some parchment paper and thick-cut bacon. Great way to store bacon.

I was debating whether or not I need a pressure canner, by this conversation it sounds like I should really consider it.
If your home library contains more volumes about survival-related topics than your local public library, you might be a prepper.
You need to try canned potatoes! Easiest thing ever to can in a pressure canner. I use my french fry cutter to quickly chop up the potatoes with the skins on. When you want french fries - just open and drain and rinse. Drizzle with a little oil and some spices (like Mrs. Dash). Bake for 15 minutes at 400 degrees and then turn the oven up to BROIL for 15 minutes. Yum!!
