I have been learning all about Shrubs this month, A very interesting history in using Vinegar's mixed with highly perishable fruits to make a long lasting stable product that is used to make safe drinks.
The basic is 1 part fruit or fruit juice, 1 part sweeter, sugar or honey and 1 part Vinegar, with or without the kick of extra..
I can't quite imagine not having the sweetness added to this but there are those that do it that way..
Its a interesting subject on preserving fruits with no refrigeration..
Anyone else making these and if so, what type of do you make an have you done any experimenting on how long they will keep?

I have done something similar but I used alcohol rather then the vinegar.
