I see a lot of new people who are just starting out on here and learning to preserve food is a big part of long term survival.
This is a collection of links I have found... hope it helps someone out 🙂

I had this available through one of my old blogs and have kept it available. It comes in 8 chapters, each it's own PDF.
If you want the Ball Blue Book, let me know, I have that one too!

If your going to buy only one kind of canner go with a pressure canner. You can do every kind of food with this. Water bath does only low acid fruits and veg.
I agree.
I need a new pressure canner (LONG story on that one) 🙁 hopefully I will find one soon!
I bought a cheap pressure cooker at Zellars. 1/2 price. It is good enough for me for now and I can do the water baths in it as well.
Has anyone tried Oven Canning? This is very easy to do. I tried it yesterday and everything sealed perfectly.
If you want to store things in jars, this is perfect. Rodent proof. 😀

Food will get you through times with no money, but money will not get you through times with no food.

"Sealed" is one thing, "safe" is another. It is always best practice to follow the tried and tested methods of preserving food so as to not waste it when it goes bad or poison people when you can't tell it's gone bad. Canning in boiling water ensures better heat penetration of the food inside the jars than does hot air oven canning.
There is also a difference between pressure "cookers" and pressure "canners", and pressure canning in a "cooker" may not keep the jars under pressure for the same period of time that a larger, more robust canner does.
As always YMMV, do what you like but beware that food preservation isn't something to mess around with.
And if by "oven canning" you are actually referring to ONLY dry goods storage rather than actual "canning", be especially careful if you choose to do this to foods like grains etc., as the heat can destroy nutrients and damage the food so that eating quality suffers. It's far better, if you wish to store smaller amounts of these foods in jars, to use a vacuum sealer with a jar attachment.
