I've been cruising around youtube getting ideas of things I'd like to try canning up in my pressure canner (23 qut).
I want to try a couple of soups and I found instructions for canning milk... http://www.youtube.com/watch?v=hzP68X3U_HY&feature=related way cheaper than commercial evaporated milk.
I also saw a video by BexarPrepper on youtube where she buys pre seasoned/marinated meats from the grocery store, on sale/deal, that she cans up.
I'm fascinated!
So...I guess what I'm asking is what is your favourite thing to can up in the pressure canner or the water bath canner.
So far I've only used my pressure canner a couple of times since new, to cook huge roasts with veg for freezer meals.
I've done many types of relishes/pickles/jams/jellies/tomatoes/green tomato mincemeat/ketchup/chutneys in the past

My favourites are green beans in the pressure canner, I grow them in the garden and any extras get canned up. I like them because they are so easy to do, no sticky syrups that mess up the kitchen and getting them prepared for the jar doesn't involve a ton of work. Another favourite is salsa however I do about 100 pints a year and it's a full two days of work and I'm exhausted at the end. We use the salsa with chips of course but also in cooking, bean lasagna, enchiladas etc.

I use the "fresh vegetable salsa" recipe on the www.homecanning.com website and it's always been our favourite. Our family likes spicy foods so I do add extra hot peppers.
canned milk. wow . thats cool . we did some deer chunks . when you opened the can it smelled like dog food but was it ever good . doing it again next season but a lot more. i think your going to see a lot more peaple going back to the old ways.
