I am new to prepping. So glad that we have some Canadian support! I was getting tired of watching the US preppers, not hating, just getting frustrated because when I wanted to purchase some stuff for prepping, I would have had to order from the US sites, (Pay duty most probably, when it came across the boarder) and so on and so on. Glad to see that there are like minded people out here in this country.
I just started canning. I canned chopped beef, I had thought, it would taste pretty bland if I just put salt, so I seasoned my meat with some onions and light spices before filling in the raw tighly packed beef in the jars' . I still wonder and hope that it would still be ok and last for at least one year if all the spices were in it.
Can someone give me advise?
I still pressure canned it for 90 min @ 10lbs of pressure.

Just looked in my Bernardin canning book and there is a recipe for chili that has beef chuck, diced onion, chili powder, cumin seed, oregano, pepper, coriander, red pepper flakes. The directions said to process 500ml jars for 75 minutes, 1 L jars 90 minutes. I do know that sage shouldn't be used in anything you pressure can because it will become bitter. Your canned beef should be fine 🙂
I also find it frustrating here in Canada where prepping resources are difficult to find. I watched a youtube video that showed the Macey's grocery store in Utah and wow it was like prepper heaven. I often get comments about the amount of food I buy when I'm going through the grocery till, makes me feel very self conscious. Call me paranoid but sometimes I will go back 2 or 3 times to buy sale items. Don't know why people think it's strange to buy 36 cans of tuna 😉
