Oh my goodness!! I am so ecstatic! I FINALLY got a 9 tray Excalibur Dehydrator!! I feel like such a big girl now!! 😀 What do you all think of these dehydrators? I can't wait to try it out!!

Dehydrating like everything else, takes some time to learn. That being said I have had mine for about a year now and I love how small stuff gets when dehydrated.
Most of my produce that gets dehydrated goes into soups, stews, etc. as I find the texture doesn't quite come back to what it was.

Yes, I will definitely have to get the hang of it! I will be making kale chips tonight as my first go. I think I will love mine too for the same reason Denob, for how small the food gets. I look forward to being able to save space in food storage with it. 🙂

You can get the texture of dehydrated vegetables almost back to normal if you boil them separately for about 2 to 5 minutes then let them rest (covered) for another 15 to 20 minutes. Then add your other ingredients and cook for another 20 to 30 minutes. Of course the timing of the cooking and resting, depends on how thick you slice or cut your vegetables before dehydrating them.
