She wrote "I just blended the eggs and poured the liquid into my fruit leather trays. Once they were dry they were put into the food processor. Turned out great!" to make powdered eggs.
This is a favorite for my group of folks... and I just found it on the site... lol we have made this a couple of times this month!
Simple Homemade Fruit Leathers
Puree a bunch of overripe fruits in a blender. Add some water (or juice) if you need to.
Pour the puree onto a fruit roll sheet (included with the dehydrator).
Run the unit for 4 to 8 hours, depending on the fruit. Basically, dry until it's dry.
Lay out on plastic wrap or wax paper and roll it neatly. Then, you can store them in a large plastic bag or container.
Note: Taste the fruit before blending so you know if you need to add sugar, syrup, or another sweetener.

I scramble them, then dehydrate them, then grind them to powder in the coffee grinder...they reconstitute with water just fine and rescramble like the first time....great to take camping or for dry storage for baking, breakfasts, omlets, denver sandwiches etc.
When you cook them (scramble) do you use any oil in the pan or just a dry non stick pan?

I have not had that work in regards to the fruit leather but I do keep alot of the pulp for making in baking for added fiber, it works well for us in that way.

I throw that stuff into everything! I freeze them into big ice cube containers then I throw it in cakes (I bake from mixes... I am not much of a baker), chili, spagetti sauce, soups and stews! 3 or 4 ice cubes in the pot for extra vitamins and veggie servings 🙂 I have even thrown fruit pulp into the bread maker and made "fruity bread" the kids thought it was funny and probably ate it just to make me happy but, they ate it! lol
We usually use beets, celery, tomatoes, carrots and parsnips for juices so, those go well in meals!
