Are they palatable?? I've heard there's some concern about disease, but isn't that similar with any animal?

Never eaten any, but catching them is easy. All you need is allot of water big soda bottles and enough people to watch the exits of the warren.
Put a soda bottle in each exit and start flooding the warren. They will run right into the bottles to escape the water. I won't claim that this is a humane way if catching, because there's a possibility of some drowning. But it works and is easy enough for children to do.
I know because I have done it on a friends farm as a kid, catch one of the rodents young enough and it made a nice pet. Since it was a farm having them in a field they were considered pests. So most of the holes were stoppered with rocks. Only one was left open for the kids to try to catch one or two for a pet.

yes to trapping as child, my folks paided us a quarter per tail, yes to eating a number of times but mainly for us used as extra feed for farm dogs or the farm cats, or if shot in the right field our pigs would eat them too.

As a kid, before I got my first .22, I snared them. All I ever used was old bailer twine. Never ate them though. To us they were just pests so we eliminated as many as we could.

Essentially, they are just groundhogs, no?

If people can and do eat opossums, raccoons and squirrels, why not groundhogs?
