garlic aka russian penicillin
has many health benefits,
to maximize these benefits the cut/chopped/minced garlic should sit out for 10 mins.
this allows oxygen in the air to react with the garlic (allicin forms then polysulfides)

if used in cooking;
after the 10 minute rest in open air,
cook on low to medium heat,
and cook for less than 10-15 minutes

a couple of relevant sites:

http://www.organicfacts.net/health-benefits/herbs-and-spices/health-benefits-of-garlic.html

i have read that the garlic in the stores from 'you know where',
is heavily irradiated, thus nullifying many of garlic's benefits
if true, it may be something to consider

And the merchants of the earth shall weep and mourn over her;
for no man buyeth their merchandise any more:
The merchandise of gold, and silver, and precious stones,...
and slaves, and souls of men.

Great post, I didn't know alot of that about the cooking. I love garlic and I grow it every year from my Grannys home supply of bulbs. If anyone cares to do so, it's really the easiest thing to grow and forget about until harvest.

If your home library contains more volumes about survival-related topics than your local public library, you might be a prepper.

Soothe a sore throat: To help heal a sore throat with garlic, mix six pressed garlic cloves with hot water, and gargle with this garlic tea twice a day, for three days. The warm liquid soothes inflamed tissues, while the garlic has antimicrobial properties that fight pain-causing bacteria. Try cooking with garlic scraps: The long, thin, green stems that shoot up above the garlic bulb are delicious. They taste like garlic, but are much milder. You can sauté them in olive oil and eat them on their own, or they can be used in recipes such as dips, sauces, stir-frys, and soups to add a garlic flavor and green color. Not to mention, they contain a good amount of protein, vitamin C, and calcium.
