Warning about powdered milk and eggs

So I'm watching this video on cholesterol.

Anyway, the worst kind of cholesterol is oxidized cholesterol, found in powdered milk and eggs. If anyone thinks they're having cholesterol issues (and the medical establishment is working damn hard to make sure you DO) the video is really good.
This is something to be aware of given that we as preppers are probably exposed to dried eggs and milk more than most, though they're in many other processed foods. The relevant part is about an hour in to the 2+ hour clip.

That's why we ditched dairy and eggs and the only animal protein we eat right now is fish once per week.. cholesterol levels dropped 50 points after the first 2 weeks and kept on falling 🙂

Perfesser, I assume this warning only applies to commercially powdered milk and eggs, not eggs we dehydrate and powder ourselves, correct?

Thanks Perfesser. I did not know this. And while I agree with perfesser that oxidized cholesterol is a concern, we must make our own choices. Everything in moderation. Eggs (mainly the yolks) are one of those foods that are naturally high in cholesterol. If you have health concerns in this area you should reduce or avoid your intake of eggs all together.

Dehydrating eggs at home is not recommended as there is a high risk of salmonella. If you do decide to try it they say you should only use fresh eggs. Not store bought and you should keep the final product in the fridge to avoid any problems. I have dehydrated them (and it is a real pain and not a recommended project for a beginner). I was a beginner at the time and didn't know any better. Nevertheless, I had no problems with the final product and it worked well in baking and fried up as an omelette. Still I don't think I would do it again. I have never tried to dehydrate milk and after my experience in doing eggs and I don't think I will try. I prefer to buy the commercially prepared product (because I can).

I realize that there is a risk using the commercially prepared products, but one I am willing to take. In a true SHTF situation these products will be difficult to obtain and if nothing else a good product to barter. Ideally we would all have our own chickens and cows but at this point in my life that is not an option for me and since I don't have a problem with cholesterol, I don't have a problem with it. Each person must weigh out the pros and the cons and make the choice that works for them.

By the way, when I dehydrate eggs, I do that after cooking them, so there should be no risk of salmonella.

Very prudent indeed.. Have you tried dehydrating milk? And if so how did it turn out.

Jumping in late...

I do keep some dehydrated milk and egg products for "just in case". We use fresh at home and though I usually abide by the "store what you eat, eat what you store" principle, there are some exceptions. If I get to the point where I have to use these products, my cholesterol will be the least of my issues...
