I came accross this and wondered if anyone else has done this and has any thoughts on it, From what I have read it seems pretty simple to do and might be something I would add to my food storage.

25 years? really.....
😀
Actually I saw it on TV, on “Doomsday Preppers”, the lady who does it says that the cheese will last 7-8 months in a cool place. Every wax has a small amount of acid in it, and that is what inhibits mold. If you don’t have wax, wrap the cheese in a muslin cloth that was soaked in vinegar and then dried. It will keep the cheese for a while also.

It looks like a great idea (if you can eat cheese and not suffer afterwards 😥 ). Some cheese comes already waxed here, but it's in huge portions! I like cheese, but I don't eat it because I pay later with pain. I'd be interested to hear how you went with the process (if you do wax your own cheese) and how it turns out!

These guys are where I buy my cheese making supplies, they have been good to deal with and someday I will find time to get some to a class or two! My goat girls group have been buying from them for years as well and all recommend them.

susannah755 - you are a hoot!
waxing cheese and it only keeps for 7-8 months? I'm a little disappointed that it wouldn't be longer. I think I just need to learn to make my own...which means I need to buy a cow or learn to milk the sheep...
farmgal is glengarry close to you? us girls are going to have to come for a week...adding cheese making classes to our list!

Yes Anita.... you would think that the cheese would last longer than that wouldn't you....maybe there is another way to preserve it?

i have had cheese and butter last for 2 years canned.
i store them in the fridge so they last along time.
have a jar of cheese i canned 4 years ago in the fridge to see how long it lasts in there.
still looks ok but not brave enough to try it.
i take canned butter on camping trips in the summer backpacking no refrigeration needed.

close enough for a easy drive for a day seminar 🙂 Milking the sheep is not hard if it has a good bag and teat placement, the one with the single lamb is the one to pick, as you can be the other 1 or 2 lambs that she would naturally produce enough for.. The perk of the sheep milk is that you really can't drink it at least not straight, its so rich it would be kinda like drinking cream, but it great for baking/cooking (I use it half sheep milk/half water for that), makes amazing yogurt, cheese and if you are a feta fan, O my! its amazing!
