I picked up 160 lbs of roma tomatoes today at a really good price. Did not realize there is a cilantro shortage because of contamination of the fields in Mexico. Does anyone know if I can use dried cilantro in place of fresh. I am using the bernardin "fresh vegetable salsa" recipe. I went to several places and told anything for a day or two to a week before they get any. I can wait a 2-3 days but a week is too long; the tomatoes won't to be looking that great and we have a family wedding out of town.
Not that dried cilantro is that great but salsa isn't the same without it. Don't want to leave it completely out and it's a pain to have to add some every time we open a jar considering I'll have around 140 pints. Any suggestions?

Crisis averted. Finally found a vegetable stand that had cilantro. Paid a premium for it though and a 40 minute round trip drive. I think the vegetable garden plan has moved up on the list of things to do for next year.
Glad to see you found a source 🙂 I love cilantro and in my opinion the dried stuff has no flavour at all. Better to find it and pay a premium than not use it or use dried....it's really easy to grow ...you might have better luck going to a nursery and buying a cilantro plant

I let all my cilantro go to seed this year and let it fall right in the garden bed - hopefully I'll have more next year.;)
