diy. dehydrated mushrooms can be rehydrated easily in hot liquid. If you have a microwave available, some stock and the dried mushrooms and a few minutes to get some heat into the shrooms and then leave it on the counter for a short while until the mushrooms look real again. If you don't have power available, put the mushrooms into a thermos style bottle and add leftover boiled water. When we have bike camped we don't waste the water after we have used what we needed for coffee or dishes, but put it into a thermos and rehydrate dinner. You can easily dehydrate onions (they freeze as well when they are chopped), celery keeps very well and can be added directly to a stew or soup pot even though they look like little green caterpillars, carrots cut into coins dehydrate well and rehydrate well in soups as well. I have dehydrated green peppers, red peppers, and lots of other vegetables from the garden and from the store if they are on sale. Most fruits dehydrate quite well, but will require some form of ascorbic acid to keep their colour from going brown.

Please check the best before date, a lot of companies put on the big sale to get rid of the 1-3 month left cans. Made that mistake, too many times. 😳

Thanks for the warning Ranger , it is one we shouild always keep in mind. I always check the best before dates. All the supplies I purchased this week had dates between mid 2013 to 2015. Many of these were not even Presidenat choice produsts but were from companins like Del Monte and were less than half price. Hard to beat that.

Froze Tomatoes (whole in their skins) for winter use. I can't eat the fresh ones fast enough! I find it easier to freeze whole tomatoes rather than 'can' them - I just hold the frozen tomato under the tap and the skin just spits off and I peel it easily. Then I can just cut and pop it into my recipe.
ICRCC - I couldn't find bulk salt at our Independant Grocer here. I guess I'll have to go to the Superstore next time I'm in the city.....
