When using a vacuum for taking air out of a large bag... we take the end of a pair of panty hose (the foot part we cut it off to use it) and then secure it over the end of the vacuum hose with a thick elastic. You can still suck the air out without vacuuming up all the contents of the bag. It works covering a crevice tool (that narrow attachment for the hose) so it is less chance of air getting in.
