Been there and done that. A sale is not a sale when it sails to the trash. Also keep an eye on sale items for expiry dates, especially Kraft salad dressings 2-3 months tops. 😐

I'm with the lack of rotating food supplies. I made that mistake early and had to replace a fair bit of food.

In testing my 72 hour kit (living out of it for a long weekend to see if I had everything I needed) I found I'd forgotten two critical items. The first was a towel. Ford Prefect would be spinning in his grave in disgust assuming he wasn't fictional, and the second was a pot to boil water in for the 'just add water' meals. I ended up having to scrounge dead pop cans, cut the tops off, and use them for water containers.

A subtler mistake I've made is assuming having the toys and the knowledge = competence. Book learning is great, but practice is king! I highly recommend using your alternate cooking sources on occasion to keep in practice.
