Jarring some sauerkraut today, getting some pots ready to sprout some chestnuts, acorns, hickory nuts.

Nice. You ever do any pressure canning to can things like meats and things with meats in them?

I don't have a pressure canner but would like to get one.
Sauerkraut doesn't even need a water bath, just refrigerate or cold store. Heat will kill the good bacteria that makes it so healthy.
Once cold the fermentation pretty much stops so I make small batches, experiment with recipes for each batch.
The key is to have a good fermenter that does small batches well.

That sounds interesting. I do like Sauerkraut. Of course, man can't live on Sauerkraut alone.

I have lots of dried food sealed in mylar bags with 02 absorbers but I am looking seriously into the pressure canner. Especially because I live alone but like to cook and my freezer is usually pretty full so when I make a big chilli or soup some invariably goes bad in the fridge before I can eat it all. I figure if I got a pressure canner and canned 50% of any soup/chilli/stew I make right away I won't waste any and it'll be stored for good use later in my basement shelving.

When I get a pressure canner I'll let you know how well it works...
